I found this recipe on the website from a fellow food blogger that I admire. It looked pretty simple and achievable and therefore on my way back from work, I stopped off at Tesco to buy a few ingredients. Although I was quite tired I still had the drive and motivation to make this little supper for our last meal of the day. It turned out quite nice. So Nice in fact that Ignacio’s response was “Bunmi, you’ve got to make this at least once a month! “

In the midst of the mini-heatwave, I went for my first swim in months.
It was glorious.
Inspired by the watermelon salad.
I made this salad with canteloupe, chopped apple, walnuts, goats cheese, fresh oregano, lemon juice and olive oil dressing and salt and pepper.
Too hot to cook or eat today. So I cobbled together this salad.
Chickpeas, avocado, goats cheese, green and black olives, tomato, red pepper, parsley, coriander, sumac, lemon juice and olive oil dressing, salt and pepper.
