working from home this Monday

I have managed to make it to the gym for the first time in weeks. It was an early start, I was up at six and on treadmill and then on the weight machines. I’ll admit my legs where shaking by the time I left but I felt good.

And later, hungry, so hungry!

So I went downstairs to make a mid morning snack. I decided to emulate one of the recipes that I’d made last week, feta and cucumber bruschetta. This time I used a couple of slices of Ryvita. For the bases I used the last of the olive and chilli tapenade (something fancy that Ignacio bought for me!) and some smoked houmous. The sliced cucumbers went on top followed by the spice mix (urfa chilli flakes, dried oregano, sumac and nigella seeds) and sultanas.

Wow…

Really nice, I almost fell of my chair, it was that good.

I think I found a more interesting way to eat humous and cucumber
