It is April and I found a jar of mincemeat in the fridge. Rather than throw it away (expiry date September 2018) I decided use it in a non pie recipes. My brief internet search brought me to mincemeat muffins and with a little tweaking and modification of the recipe, here they are.
Ingredients
1/3 Leftover jar of mincemeat
100 grams of golden caster sugar
75 grams of butter
2 medium eggs
100 grams of plain flour
Method
1. Preheat the oven to 180°C, fan 160°C, line a 6- hole muffin tray with paper muffin cases.
2. Cream the butter in a bowl. Add the caster sugar and beat until light and fluffy. Whisk the eggs in a small bowl for a few seconds or until just mixed, then gradually add them to the creamed butter mixture, beating all the time. Beat in the mincemeat, then sift in the flour and fold in gently.
3. Divide the mixture among the muffin cases and bake for 25-30 minutes or until well risen, deep golden on top and lightly springy to the touch. Remove from the oven and leave to cool for 5 minutes before transferring to a wire rack to cool completely.
