A first for me, I have been invited to join a Facebook page ‘Good Eats‘ dedicated to people that love food. I have therefore spent the past few days looking at an inspiring stream of new recipes. One of the many that caught my eye was a very simple oatmeal chocolate cookie recipe. It introduced me to coconut sugar, which I somehow did not know existed before now (I also know it’s very expensive!) and I guess will become part of my cooking repetoire.
These are quite tasty little numbers! Very moreish and not too sweet! I have eaten 3 already. These are definitely going to make a regular appearance in my packed lunch box.
Ingredients
3/4 cup oatmeal
1/2 cup flour (oat, spelt, whole wheat/grain)
1/4 cup coconut sugar
1/4 cup coconut oil
1 egg
cocoa nibs to taste
Method
1. Mix ingredients in bowl
2. Divide the dough into 12 balls, place onto baking tray and squash slightly.
3. Cook for 10 minutes and 180 degrees Celsius
