Me: Nacho you’re cooking lunch today
Nacho: OK
Nacho walks into the kitchen, Nacho walks back in the living room.
Nacho: there’s nothing to eat, shall we eat pasta?
I roll my eyes
Me: really? Can’t you be more creative?
Nacho: there’s nothing to be creative with.
I walk into the kitchen and chop up 1/4 of a watermelon into slices and place into a bowl. Both Nacho and polish them off within five minutes. I then go back to the kitchen and empty a packet of carrot sticks into the same bowl. We both munch away while our stomachs growl in harmony.
Me: well I’m going to bake some brownies.
I go into the kitchen and start assembling the ingredients for my baking. I notice a half filled container of black eye beans in the cupboard. I remember that there is a packet of cod and sweet potato in the freezer from last Saturday’s shop and I remove them from the freezer. And so while I am making the brownies I am planning another recipe in my head.
When the brownies are in the oven. I boil the black eye beans with a pinch of salt. I blitz three onion in the food processor. I fry them with, two large pinches of salt, a sprinkling of smoked paprika, ground coriander, black pepper and ground nutmeg. I then add a vegetable stock cube to 300ml of water and pour this into the onion mix. I let it boil for 5 minutes. I then add 500ml of passata. I let this bowl for a further five minutes then I add in the drained and boiled black eye beans, a packet of sweet potato and butternut squash and a packet of cod. I let the whole thing cook on low heat for forty-five minutes.
The final result is tastier than I imagined it would be.
Me: it’s OK?
Nacho: it’s more than OK, it’s delicious!
