Thursday was busy day for me. A full morning clinic and an afternoon of report writing. I finished dictating the last letter at six o’clock and then sped of home down the M1.

I was not as tired as I usually am and decided I might just try baking this impossible pie recipe I’d found at the weekend. Turned out to be very simple to cook. I also had a craving for plantain so I baked some as a side dish. Whole thing was mouth wateringly delicious.
