I spent an evening this week watching Epicurious videos with Nacho (yes, we share an obsession with all things food related). These videos are quite entertaining and addictive. One of the videos was on French Toast which triggered a craving for ‘eggy bread‘, as I have grown up calling it, that I have finally managed to satisfy this evening.

As usual, I commandeered what was available, so I made an egg mixture with coconut milk, cinnamon, agave syrup and a pinch of salt. Nacho appears to have developed a liking for olive bread so the only old bread in the fridge were a few slices of a Kalmata Olive bloomer (yes…). I served it with a ‘baked’ banana and drizzled with more agave syrup. It sounds weird but it was delicious and hit the spot!
