Yes, more of the sweet stuff…
I needed to use up the remains of the soda bread, a random sliced loaf and double cream. I thought a bread and better pudding might be a nice way to finish them off. Not something I am used to making or eating. It may be something that I do in the future as it’s so easy to make, so tasty and so comforting. It ticks all of the boxes.
Ingredients
25g/1 oz butter
8 thin slice of bread
50g/2oz sultanas
2 tsp cinnamon powder
350ml/12 fl oz full fat milk
50ml/2 fl oz double cream
2 eggs
25g/1 oz light muscovado
grated nutmeg
Method
Set the oven to 180oC/160oC/Gas 4
Grease the pie dish with butter
Use the rest of the butter to spread on each slice of bread. Then cut the slices into triangles.
Place the bread butter side up in the bottom of the pie dish.
Add a layer of sultanas and sprinkle some cinnamon.
Then repeat the bread, sultana and cinnamon layers until bread used.
Beat the eggs, milk and sugar in a bowl and pour this mixture over the bread.
Cover the bread with the egg-milk mixture, cover with cling film and leave to soak in the fridge for at least 30 minutes.
Then bake in the oven for 30 – 40 minutes or until golden brown.
