Sweetcorn and feta cheese fritters

At some point last month, I woke up with a craving for sweetcorn and feta cheese. It was pretty random. So on the weekly Tuesday shop, I bought a bag of frozen sweetcorn and two packets of feta cheese.

I then forgot all about it and most of the feta cheese got eaten in something something. The bag of sweetcorn was used to bring down the swelling in my leg when I fell off my bike. So it seemed like just another impulsive thought leading to nowhere. But no it was not to be that way, they say necessity is the mother of invention, and when it was my turn to cook dinner and I thought I was all out of ideas and inspiration, I suddenly remembered the half block of feta cheese left in the fridge.

I found a recipe online – cannot remember the link now – and I for once did not write anything down. I just gleaned that I needed flour, eggs, salt pepper and some chilli flakes and voila, sweetcorn and feta fritters were fried into existence. There was also some sad white fish in the fridge which got fried and one lonely tomato that was sliced, sprinkled with salt and oregano and drizzled with olive oil. A bowl of olives, some sliced and toasted olive bread and the last of the grapes for dessert and that was dinner done. Thank you very much (takes a bow).

It was a small but tasty meal. There was quite a bit of batter left so I ended up eating more fritters for breakfast. Also very nice.

So the craving has been satisfied, it’s been handled. I wait with interest to see what the next one will be…
