Pork ginger noodle soup

I found this recipe on the website from a fellow food blogger that I admire. It looked pretty simple and achievable and therefore on my way back from work, I stopped off at Tesco to buy a few ingredients. Although I was quite tired I still had the drive and motivation to make this little supper for our last meal of the day. It turned out quite nice. So Nice in fact that Ignacio’s response was “Bunmi, you’ve got to make this at least once a month! “

And the nicest part of the evening, listening to this playlist while chopping and frying and cooking. Lovely.

    Wow! Thank you so much for your lovely words! I am so thrilled to read that you made this soup and enjoyed by you and your partner! I love noodles as well because they are so versatile and do not take much time to make. When WFH, I can whip up a quick lunch of noodles while listening to meetings (and turning off the Zoom camera! LOL!) Thank you again and have a great Sunday! 🙂

    By the way, I made this soup many times and this week, I tried with tofu. I used firm tofu instead of pork. It work really well as well. I crumbled the tofu into chunky pieces. Just an idea if you also like and eat tofu. 🙂
