Brown chickpea curry

I worked from home yesterday. Despite not leaving the flat it was pretty busy and full on. I somehow managed to attend 4 meetings. In a crazy and certainly not to be repeated situation, at some point I found myself in overlapping meetings. I finished work and my brain was like rush. Ignacio was working so it was my turn to cook dinner. There didn’t seem to be anything very exciting in the kitchen. So I thought I might have to make something from the ‘canned food’ supply. We had a can brown chickpeas (kala chana) so I thought I might make a ‘curry’.

Ginger, garlic, carrots, pepper, spinach, coconut milk, and peeled plum tomatoes. Also an additional magic ingredient.

It was delicious.
