So I found this recipe for Filipino chicken adobo by an admired fellow blogger.
It’s been on my list of recipes to try for a while now. I remembered it on Sunday evening when I was reorganising the meat section in the freezer (yes, this is indeed how I roll…).
How did it go? Well I followed the recipe in principle but used apple cider vinegar, as this is what I had in the cupboard. I made the marinade on Sunday evening and left it overnight, cooking the chicken when I came home from work on Monday evening.

It’s delightfully simple to cook and making the rice as an accompaniment was equally stress free.
How did it taste? Very nice, thank you! Intense and vinegary but not overwhelming and the plain rice and a nice balance and complement.
I will definitely be making this again using the last of the chicken drumsticks in the freezer .
