Last Monday while working from home I continued to plough through mountains of admin and more telephone reviews. Then it was suddenly the early evening and I was very hungry and the work had not finished. I still had the clinic for Tuesday to prepare for and didn’t really want to it leave for the morning, just before the clinic. So I thought I’d make a comforting snack before doing an evening admin shift.
I had a craving for eggy bread but not for anything sweet. I remembered that one of my friends had bought me a cookbook from a Ukrainian cook last year – Olia Hercules – ‘Home Food’. I hadn’t really explored it much, but I do recall an eggy bread recipe that caught my eye because it just screamed comfort!
However, I soon discovered that didn’t really have all of the ingredients – no mayonnaise and no grateable cheese! In this recipe from Olia , slightly stale slices of bread are rubbed with garlic, soaked in a beaten egg mixture, then pan-fried in butter until golden and set. Then served warm with a bit of mayonnaise and shredded Gouda cheese. Sounds wonderful doesn’t it?

So I rubbed a cut garlic clove on my slices of bread, soaked the slices in my egg and milk mixure. Fried them up until golden, well some got a bit too brown! Then topped them with slices of brie. Reconfortante. It did wonders for my soul and made the burden of clinic admin a little easier to bear.
