It’s lunchtime on Sunday 15th October, I am eating brunch and listening to the news while world continues to implode. In other news, trivial and unimportant, I fried some bananas this morning. I put them on some toast covered with almond butter. I sprinkled cacoa powder and drizzled some maple syrup over the bananas. It was very nice and I was extremely grateful that I was able to just do something as ordinary as eat food in the peace and calm on my own home. Something I will never take for granted.

Ingredients
- Extra virgin olive oil (optional)
- 2 firm bananas
- 4 slices of dark, dense rye bread
- 80g (5 tbsp) nut butter [I used almond butter from a tub!]
- raw cacao poweder for dusting
- Maple syrup, to taste
Instructions
- Rub a large non-stick frying pan with a dash of oil and put it over a medium heat.
- Slice each unpeeled banana in half lengthways, then carefully remove the skin.
- When the pan is hot, cooke the bananas for 2 – 3 minutes on each side, until golden. Take care whe. flipping them becasue they soften as they cook.
- Lightly toast the bread and dividu between 2 plates. Spoon some nut butter onto each slice and top with the caramelised banana. Dust with a little cacao powder, and a drizzle of maple syrup if you’re feeling fancy.
