What’s your favorite recipe?

I’m really describing my favourite meal here and it has to be jelloff rice with fried chicken and plantain. In the days when I would go home for my birthday,  it would be the meal I would unfailingly ask my mother to prepare for me.  Much of the excitement about this meal is usually in the anticipation, you know it’s going to be delicious, you know it’s going to remind you of everything good in life and you can’t wait to experience it. Just looking at a plate of the burnt orange coloured rice with, surrounded by golden discs of plantain is like looking a beacon of hope innocently placed on the wooden sea of the family dining table. The smells are not the most exciting, fried food chicken or plantain is OK but nothing to write home about. But the taste, the taste is something else. Jelloff rice when cooked correctly has a deeply satisfying effect on me. It’s a little bit hard to describe, it’s tomatoey and currified, it’s hot and spicy. It is balanced perfectly by the juicy sweetness of the plantain (dodo to Nigerians) pieces eaten alongside it. The fried chicken in the form of drumsticks is succulent on the inside with a guiltily eaten crispy outer skin. Of course, it would not be a complete meal without a cold bottle of Super-malt straight from the fridge. This dark, sweet, malty beverage is the taste of childhood. It brings back memories of being good and being rewarded and full bottle of this nectar from the heavens. This is a meal like no other and there is always from for seconds and even thirds.
