So I made these. I did not really like them. Too dry and crumbly for me. Perhaps my technique was off? Despite this, they have been the go to snack for home and work office lunches for the past week. I need to refine my granola bar making skills.

interestingly enough, when I crushed them up and mixed them with milk – much nicer!

2 cups oats

1/3 cup desiccated coconut

1/4 pumpkin seeds

1tbsp chia seeds

1/3 cup peanut butter 

1/4 maple syrup/agave syrup

2 tbsp coconut oil

Optional: chocolate chips

Preheat oven to 160oC

Heat the maple syrup, peanut butter and coconut oil together in a saucepan over medium heat. Stir until the mixture is smoothly combined. Remove from the heat and let it cool.

In a large bowl add all the remaining ingredients. Then add in the peanut butter mixture (ensure cool as it will melt the chocolate chips). Mix really well.

Pour mixture into prepared dish. Press the mixture firmly into the tin so it’s tightly packed together. 

Bake for 15 – 20 minutes or until golden.

Make sure you wait until the bars have completely cooled before you slice them (you can pop them in the fridge).
