I bought some packs of frozen cod and smoked haddock from Tesco yesterday evening. I did have the vague idea that I was going to make some kedgeree . Which I did. I adapted a recipe from Mary Berry’s cookbook.

Clearly not something I do as a regular but enjoy it nethertheless.
Today I did not bother with measurements or the stick to ingredient list simply because I didn’t have everything and I was not in the mood to leave the house. I thought I’d use what I had at home.
So that meant I used up the frozen cod that we already had in the freezer. An unopened pack with two cod fillets in it. A Tupperware with one cod fillet in it. I only had one red onion but somehow that was enough. I didn’t have any crème fraiche but had already decided that it wasn’t going to be part of my version today anyway. I had no coriander 🌿 but did have some frozen spinach in another Tupperware that needed using up and a packet of frozen parsley 🌿.
It was another soothing cooking exercise, alone in the house on Saturday evening just my laptop 💻 for company. I finished watching season 3 of Harlem and started on ‘The Book of Eli’ – which is apparently coming off Amazon Prime in just over a week.
The final product was lovely. Tasty and filling. I managed to time my cooking so that it was all ready by the time Ignacio came home from work, making for a nice little cozy meal for two. It was a lovely end to a slow and perfectly paced day.
