Today I treated myself to a slow and luxurious breakfast. French toast, my favourite go to, but something I’ve not had the time to make for a while. It was an absolute privilege and pleasure for me to put this together. I had some left over brioche hot dog rolls from a family barbecue. They had been patiently waiting in my freezer for this moment and they did not disappoint. I cut up two rolls into eight chunks and soaked them in an egg mixture. The eggs had been whisked with a pinch of salt and some cinnamon. I melted some unsalted butter in the frying pan and then cooked the soaked brioche pieces. I served this with some Greek yoghurt and blueberries, drizzled with honey. The final product was as tasty and comforting as I intended it to be.
