Currently working on my ‘stew game’. Well I’m actually not sure if what I am making is a stew. I’ll tell what I am up to and you can tell me…
I chop up some onion and carrots, open a can of chickpeas/green lentils/butterbeans/black eye beans and pour out a cup of ‘small pieces’ pasta (cubetto, orzo, orchiette, gigli). I add olive oil to a saucepan and let it heat up then add a sprinkle of cumin and coriander seeds, followed by a spattering of ground tumeric. I stir that around for an unspecificied time, depending on what mental rabbit hole I am flying down. Then I add the chopped vegetables and a pinch of salt , stir and allow to saute. When the onion appears soft looking I add a chicken stock cube. Then I add two cans of any combination of pulses and a cupful of pasta and cover the mixture in water. I let it boil and turn the heat down and allow to simmer for at least 30 minutes. Then I will let rest for another 30 minutes and serve.




It’s pretty much my staple now for working from home lunches. Quick and easy to assemble, tastes good and there is usually enough for me to take to work the following day. It feels like a win win.
