There were three sweet potatoes sitting in the vegetable bowl, so it seemed like the perfect starting place for my experimentation. I sliced some pieces sweet potato and baked them for about twenty minutes in the oven with a drizzling (yes I love the word drizzle) of olive oil. I fried up some spring onion and grated in some ginger and mixed it all together with peanut butter. Once the sweet potato was baked I put some ham on each slice and topped the whole lot with the peanut butter mixture. It might seem like a strange concoction but actually tasted pretty nice.
