Did I tell you that I love avocados? Maybe, maybe not. I decided to use half of one in my adventures in experimental canapé creation. This evening I used toast, soft cheese, acovado and pineapple. The avocado is sliced and ‘marinated’ in lemon juice, salt and pepper.

An interesting combination. Smoothness and creaminess of the avocado and soft cheese, sharp sweet taste of pineapple with a dry crunch of the toast.
