Sunday morning found me in a little bit of a dark mood. I’m letting this pass through me and I hope that it will dissipate soon. I spent most of Sunday asleep, I am still emotionally and physically exhausted from the past week. However it was not long before I started feeling the call of the kitchen to distract me and take away my blues. Last weekend I had developed a craving for rum and raisin cake and I got my friend to send me over a recipe. It was incredibly therapeutic to make this cake. I especially enjoyed sitting quietly at my kitchen table whisking the egg, sugar and vanilla mixture for 15 minutes.

I only had white rum and mixed fruit, which has probably changed the authors intended taste. However the taste itself was quite pleasant, very rum like.
