It’s seems spending all my free time scrolling through Instagram has its benefits! I found this gem of a recipe on Friday night and by Saturday lunchtime it was served and ready on the dining table.

It was light and refreshing. It is filling but not too heavy.

And somehow fuelled the energy for a walk on Davey Down and along the Mardyke River.








It was so nice to be outside! It wasn’t too cold and although it was muddy it was wonderful to just walk in the relative peace and quiet.
