Caprese salad is classic Italian dish made from tomatoes, mozzarella and basil. It’s vibrant colours, fresh taste and ease of construction make it an essential on a hot summers day. I recall that the first time I ate this was on the beautiful island of Capri, many years ago on our honeymoon. It was nice but somehow I don’t remember it being as nice as the salad I made for myself!
Ingredients
(for one person)
2 tomatoes
Fresh basil 10 g
Salt and pepper (to taste)
Balsamic vinegar 1 tbsp
Mozzarella 250 g
Instructions
Cut the tomatoes into slices
Cut the mozzarella into slices and alternate the mozzarella and tomatoes slices onto a plate
Spread the fresh basil leaves over the salad and lightly season with salt and pepper
Drizzle a small amount of balsamic vinegar over the salad and serve
